Sweetcorn Chowder
Ingredients
- 1tbsp Oil
- 1 Yellow Onion (small, chopped)
- 400g Potato (peeled and halved)
- 1l Vegetable Stock
- 500g Sweetcorn
- 200ml Milk
- Chives (to garnish)
Method
- Heat the oil in a saucepan over medium heat. Add the chopped onions and most of the spring onions and fry for 6-8 minutes, until soft but not golden.
- Scatter in the potatoes and fry for 4 minutes, to soften a little.
- Pour in the stock and bring to a boil.
- Reduce the heat to medium-low and simmer for 15 minutes.
- Season to taste, then tip in the sweetcorn and pour in the milk.
- Cook for 3-4 minutes until the corn is tender.
- Blend and divide into bowls.
- Scatter the chives and remaining spring onions to finish.
