Minestrone

Ingredients

  • 1tbsp Oil
  • 1 Onion (peeled, finely chopped)
  • 3 Cloves of Garlic
  • 40g Bacon (finely diced)
  • 1 Sprig of Thyme
  • 1 Carrot (quatered lengthways and thinly sliced)
  • 1/2 Leek (small, cut into 2cm pieces)
  • 1 stalk Celery (thinly sliced)
  • 1tbsp Tomato Purée
  • 1L Chicken Stock

Method

  1. Heat the oil in a heavy-based saucepan.
  2. Gently cook the onion, garlic, and bacon for 3-4 minutes without colouring, stirring every so often.
  3. Add the rest of the ingredients, season and simmer gently for 40 minutes.
  4. To serve, ladle the minestrone into warmed bowls.
