Leek and Potato Soup

Ingredients

  • 1tbsp Oil
  • 1 Yellow Onion (sliced)
  • 225g Potato (cubed)
  • 2 Leeks (medium, sliced)
  • 1l Vegetable Stock
  • Salt
  • Pepper

Method

  1. Heat the oil in a large pan and add the onions, potatoes, and leeks. Cook for 3-4 minutes over a medium heat until starting to soften.
  2. Add the vegetable stock and bring to the boil. Season with salt and pepper.
  3. Simmer for 10 minutes until the vegetables are tender.
  4. Blend until smooth.
  5. Reheat in a clean pan, and serve.
